Description:
We are looking for an experienced Sushi Chef to join our clients culinary team and work closely with the Head Chef in their renowned Asian restaurant. This role requires a deep understanding of Japanese cuisine and the ability to create a variety of sushi dishes that will establish their restaurant as a leading destination for Japanese food lovers.
As a Sushi Chef, you will be responsible for crafting a rich sushi menu featuring high-quality raw fish and other main ingredients. You will also prepare appetizers, soups, and salads that align with Japanese culinary traditions. In the absence of the Head Chef, you will manage and lead the kitchen staff, ensuring that all food preparation meets our strict quality standards.
Your expertise will also be essential in overseeing kitchen stock, maintaining hygiene and safety standards, and providing training and guidance to junior kitchen staff. We value creativity, precision, and leadership in our kitchen, and we are looking for someone who can bring these qualities to our team.
Responsibilities:
- Create and prepare an extensive sushi menu, including dishes with salmon, tuna, and unagi.
- Prepare appetizers, soups, and salads consistent with Japanese cuisine.
- Manage and lead the kitchen staff in the Head Chef’s absence.
- Coordinate with wait staff to accommodate special requests and food allergies.
- Provide training and guidance to junior kitchen staff in cooking, preparation, and plating.
- Supervise all food preparation and presentation to ensure quality and adherence to restaurant standards.
- Oversee and organize kitchen stock, ensuring proper dating and quality assurance.
- Implement waste reduction strategies and manage budgetary concerns.
- Work with the Head Chef to maintain kitchen organization, staff efficiency, and training opportunities.
- Monitor and uphold hygiene and health and safety principles.
Requirements:
- Matric, Culinary Diploma preferred.
- Approximately 4 years of experience in a senior chef role.
- Work experience as a Sushi Chef or in an Asian restaurant.
- Proficient in various sushi types and sushi-rolling techniques.
- Own transport with a valid driver’s license.
- Ability to work quickly and accurately.
- Strong leadership and management skills.
- Team player with basic computer skills (Word, Excel, Outlook).
- Exceptional customer service and communication skills.
- Strong organizational skills and attention to detail.
- Availability to work during opening hours, including evenings, public holidays, and weekends.
- Ability to work under pressure.
- Creative problem-solving skills.
