Sous Chef – Luxury Lodge – Bazaruto Archipelago, Mozambique
Passionate about guest delight and teaching with the intention of inspiring others about culinary experiences?
Our client, a luxury lodge, is looking for a Sous Chef in the Bazaruto Archipelago in Mozambique.
Kitchen Hygiene standard setting
Abide by the 7 day Menu set according to Food Styling Guide and approved by our Food Fundi
Work with the training chef when visits are conducted and be feedback fit
Presentation as discussed and according to Styling Guide
Up to date with What’s Hot & What’s Not, Through the Tummy of the Guest
Creative Picnic Banqueting according to Food Styling Guide
Good communications skills
Good stock controls and stock rotation
Assist with all food orders, storerooms and fridge and deep freezers in absence of the Executive Chef
All food going out to guests at any time to be checked in absence of the executive chef
Sound knowledge of dietary- and allergy requirements
Good understanding of the English language, written and verbal.
PREVIOUS WORK EXPERIENCE REQUIRED:
At least 2+ years Chef experience
Passion for kitchen management – including all kitchen administration, general hygiene and people management
Passion for creating fabulous food, and new ideas
This is a permanent live-in position, based on the island. Transport to/from leave cycles is the successful candidate’s own responsibility.
