Sous Chef – 5* Relais & Chateaux – Winelands

Our Client, a luxury, 5* Relais & Chateau wine estate in Stellenbosch is looking for a Sous Chef who will be responsible for taking care of the breakfast and room service sections. The Sous Chef will be responsible for preparation, food quality and freshness and duties assigned by the Head Chef to meet the standard and quality set by the restaurant. This person will work mainly breakfast shifts and it may also be required to work other shifts as required from the Head Chef.

Responsibilities:

Overseeing and managing the breakfast and room service sections
Provide guidance to junior kitchen staff members in these 2 sections, including but not
limited, to line cooking, food preparation and dish plating
Oversees and organizes kitchen stock and ingredients
Ensures a first-in, first-out food rotation system and verifies all food products are properly
dated and organized for quality assurance
Keeps cooking stations stocked, especially before and during prime operation hours
Train and assess staff on the job
Manages food and product ordering by keeping detailed records and minimizes waste, plus
works with existing systems to improve waste reduction and manage budgetary concerns
Monitor and maintain health and safety
Ensure that you are familiar with the weekly and daily reservations, events and menu requirements

Requirements:

Culinary Diploma
Preferably +/- 4 years of previous experience in a senior chef role
Own transport with a valid driver’s license
Basic computer skills (word, excel, outlook)
Leadership and management skills
Exceptional customer-service skills
Excellent written & oral communication skills
Strong organizational skills
Attention to detail
Availability to work within opening hours as required
Ability to work under pressure
Creative problem-solving skills
