Sous Chef – 4-5* – International Cruise Lines
International Cruise Ship brand based out of the UK are seeking SOUS CHEFS WITH PREVIOUS CRUISE SHIP EXPERIENCE and 4-5* HOTEL experience to onboard as soon as possible.
You will be responsible for covering the costs of required visas and medicals upfront, but will be reimbursed once you have boarded. The costs may vary depending on which visas you are required to get for your particular ship. This cost will average at circa R8000.
Sous Chefs are also required to get an STCW qualification prior to boarding. These costs are not refundable and average R8000 – R10 000 depending on which institution you use.
The cruise ships are 7 days a week for 6 months with 2 months paid leave off.
Standard Role Summary:
Responsible for the service, standard and quality of all dishes and food products produced within an allocated
area/outlet of the Food Preparation Department, in accordance with company corporate menu cycles.
Experience / Qualifications
Must have previous Cruise Ship experience
Large scale production experience, leading teams over 50 people
City & Guilds 7061/2 or equivalent recognised hotel / culinary diploma / qualification
NVQ I or II Food Production / Preparation qualification or equivalent
Level 3 Award in Supervising Food Safety in Catering is desirable
Experience working within a 4 / 5-star volume hotel or restaurant establishment preferred
Awareness of budgets and food wastage gained within a corporate environment
Competent IT skills
Good command of written and spoken English Certificates
Valid ENG1 medical certificate or equivalent for the duration of each voyage
