Senior/Sous Chef – Premier Asian Restaurant – Stellenbosch

Our client is seeking a dedicated Senior/Sous Chef to join their acclaimed Asian restaurant. Work closely with the Head Chef to manage kitchen operations, ensure food quality, and oversee staff. Competitive salary based on experience.

Description:

We are looking for an experienced Senior/Sous Chef to join our clients team at a distinguished Asian restaurant. This role requires you to assist the Head Chef in managing daily kitchen activities, including staff oversight, menu preparation, and maintaining food quality and freshness. You will be pivotal in ensuring meal quality and consistency by adhering to designated recipes.

As a Senior/Sous Chef, you will lead the kitchen staff in the Head Chef’s absence, provide guidance to junior kitchen staff, and organize kitchen stock and ingredients. Your responsibilities include managing food rotation, keeping cooking stations stocked, training staff, minimizing waste, and ensuring all food preparation meets our clients high standards. You will also assist in menu creation and ensure health and safety standards are maintained.

Main Responsibilities:

  • Manage and lead the kitchen staff in the chef’s absence.
  • Provide guidance to junior kitchen staff, including line cooking, food preparation, and dish plating.
  • Oversee and organise kitchen stock and ingredients.
  • Ensure a first-in, first-out food rotation system and verify all food products are properly dated and organised for quality assurance.
  • Keep cooking stations stocked, especially before and during prime operation hours.
  • Train and assess staff on the job.
  • Manage food and product ordering, keep detailed records, and minimise waste while improving budgetary concerns.
  • Supervise all food preparation and presentation to ensure quality and adherence to restaurant standards.
  • Work with the Head Chef to maintain kitchen organisation, staff ability, and training opportunities.
  • Assist the Head Chef with menu creation.
  • Monitor and maintain health and safety standards.
  • Maintain staff and leave rosters.
  • Ensure that all CDPs are familiar with the weekly and daily reservations, events, and menu requirements.
  • Ensure that each dish leaving the kitchen is checked for quality, quantity, presentation, and correct temperature.

Requirements:

  • Culinary Diploma.
  • Approximately 4 years of experience in a senior chef role.
  • Own transport with a valid driver’s license.
  • Strong leadership and management skills.
  • Ability to work effectively in a team.
  • Basic computer skills (Word, Excel, Outlook).
  • Exceptional customer service skills.
  • Excellent written and oral communication skills.
  • Strong organizational skills and attention to detail.
  • Availability to work within opening hours, including evenings, public holidays, and weekends.
