Kitchen Manager/ Floor Manager – Upmarket Restaurant – Johannesburg

Join our elite team as a Culinary Leader in our esteemed upmarket restaurant. We’re seeking a visionary individual with 2-4 years of kitchen management experience. If you possess a passion for culinary excellence, inspire teamwork, and uphold the highest safety and hygiene standards.

Description:

  • Lead kitchen operations to achieve culinary excellence.
  • Foster a positive and collaborative work environment.
  • Ensure compliance with all safety and hygiene regulations.
  • Oversee food preparation, quality control, and waste management.
  • Train, mentor, and develop kitchen staff.
  • Manage inventory, stock rotation, and ordering processes.
  • Coordinate with front of house for seamless service.
  • Drive cost control initiatives while maintaining high standards.
  • Innovate and contribute to menu development and special events.

 

Requirements:

2 – 4 years’ experience in managing a kitchen
• Team Management and coordination and motivation
• Knowledge and Practice of all safety and hygiene standards according to HASAP regulations.
Floor management experience
• Handling and oversight of SOPs with regards to food preparation, cleaning and waste (including recycling).
• Attendance, active participation and coordination of self and team in all relevant training sessions on & off site.
• Control and oversight of quality, consistency, and supply specification.
• Understanding and implementation of effective food cost control and management practises.
• Training, coaching and guidance to team and new hires.
• Inventory Management, stock count, rotation, and storage practices
• Rostering and scheduling.
• Ordering and receiving of supplies, checking accuracy and quality of product received
• Coordination of À la carte service in a timely manner and managing the effective communication between BoH and FoH service.
