Description:

  • Collaborate with the culinary team to craft and execute innovative and high-quality dishes.
  • Lead and participate in the preparation of various dining experiences, including a la carte, boma, adventure food, and villa family-style dining.
  • Uphold high standards of food quality, presentation, and hygiene.
  • Assist in menu development, considering guest preferences, dietary restrictions, and seasonal availability.
  • Mentor and train junior kitchen staff, fostering a positive and collaborative work environment.
  • Contribute to the establishment and implementation of standard operating procedures.
  • Manage stock control efficiently and oversee kitchen supplies ordering.
  • Adhere strictly to health and safety regulations.

Requirements:

  • Proven experience as a Junior Sous Chef or similar role, emphasizing a la carte and lodge-style dining.
  • Culinary degree or equivalent qualification from a recognized institution.
  • Strong leadership skills with a collaborative approach to teamwork.
  • Excellent organizational and time management abilities.
  • Flexibility and adaptability to thrive in a fast-paced, dynamic environment.
  • Positive attitude, good energy, and a passion for delivering outstanding culinary experiences.
  • Knowledge of South African cuisine and an appreciation for local ingredients.
  • Previous experience in a lodge setting is highly advantageous.
