Executive Chef – Luxury Lodge – North West

Description:
Culinary Wonderland: Oversee the culinary magic within 2 lodge kitchens and private villas, specialising in “Fine Dining Cuisine” set against the backdrop of Madikwe’s natural beauty.
Leadership Safari: Manage a diverse team of 13 chefs, fostering a culture of excellence and camaraderie.
Wildlife Collaboration: Collaborate closely with General Management to harmonise culinary offerings with the unique atmosphere of Madikwe Game Reserve.
Roster Mastery: Create and manage shift rosters to balance productivity and well-being for your culinary brigade.
Tech-Infused Kitchen: Implement cutting-edge technology for computerised stock control, ensuring optimal inventory management.
Supply Expedition: Navigate weekly orders with precision to maintain a well-stocked and diverse kitchen.
Costing Mastery: Conduct pre-costings that align with budgetary goals without compromising on the extraordinary dining experience.
Hands-On Harmony: Embrace a hands-on approach, actively participating in kitchen activities while guiding and nurturing your team.
Salary: Experience a competitive remuneration ranging between R28,000 and R35,000 per month.

Time Off: Revel in a flexible 6-week on, 2-week off schedule, accommodating your work-life balance.

Requirements:
Professional Experience: A minimum of 5 years of experience in culinary management, preferably with at least 2 years in an executive chef or head chef role. Experience in a luxury lodge or resort setting is highly desirable.
Culinary Expertise: In-depth knowledge of various culinary styles, techniques, and cuisines. Demonstrated creativity in menu development and presentation.
Menu Planning: Proven ability to create, plan, and execute diverse and seasonal menus
Leadership Skills
Quality and Safety Standards: A commitment to maintaining the highest standards of food quality, hygiene, and safety. Familiarity with health and safety regulations and food handling protocols.
Budget Management: Proficiency in cost control, budgeting, and financial management, including the ability to optimise food costs and inventory.

Communication Skills
Adaptability: Flexibility to work in a remote lodge environment, which may include irregular hours, long shifts, and adapting to the lodge’s specific needs and guest expectations.
