Our Client is looking for a Corporate Executive Chef to manage the entire culinary operation in a leading food and beverage company that owns and operates international and home restaurant concepts across the Middle East.

With over 500 employees, the company oversees 20 operational outlets including restaurants, delivery services and central kitchen facilities and plans to have a determined expansion across the MENA region.

MAIN DUTIES INCLUDE:

Coordinates the kitchen staff and manage the preparation of meals
Menu planning and management responsibilities
Plan menus, create daily and weekly specials, create special menu for functions, and determine portions sizes
Oversee prep work and ensure that all outflow of products leaving the kitchen are consistent in presentation and quality
Active cost controlling and maintain of food cost
Flexible for international travel for training franchises Train and manage kitchen personnel and supervise/coordinate all related culinary activities
Monitor and review performance of subordinates to ensure proper training of the staff is taking place
Ensure the implementation of a correct “food production schedule” for each department and for each crew to maximize effectiveness and efficiency of employees’ working schedule
Estimate food consumption and requisition or purchase food
Ensure that each department/section place an order for next day consumption based on their par stock levels
Ensure proper receiving, storage and rotation of products to comply with the standards
Minimize waste and maximize thorough usage of food through careful ordering, proper and well-organized storage, use of proven recipes and creative use of leftover food
Manage the kitchen and ensure compliance with all standards of best practices
Ensure that safety standards and sanitary requirements are met each and every day
Oversee catering evens and may also offer culinary instruction and/or demonstrate culinary techniques
Review daily flash report and actively involve in controlling food and labour cost.
Ensure proper equipment operation/maintenance

The Corporate Director of Culinary must maintain confidentiality, use sound judgment and perform independently while performing the duties of the job

EXPERIENCE AND SKILLS:

BA in Culinary desired and minimum of 5 year work experience in a similar position

Fluent in English (Arabic is an advantage)

Excellent Communication skills

Advanced culinary skills including food preparation, flavor pairings and other cooking best practices

Current knowledge of trends in the restaurant industry

Demonstrates ability to teach, supervise and evaluate employees

Stress management skills

Time management skills

HACCP training desired

Effective public relations and public speaking skills

A self starter with a high degree of initiative

SALARY:

Salaries are negotiable based on experience
